It’s said that variety is the spice of life, but what if you just can’t tolerate spicy foods?
When it comes to understanding capsaicin, the molecule in food that creates that burn in our mouths, the jury’s still out. You know that burning that hits your tongue the second you taste something spicy? That’s your nerve endings reacting to capsaicin.
What we do know about capsaicin in the short term is that, when you flood those tongue receptors over the course of the meal, they eventually stop sending the burn response to your brain. And, if you keep eating spicy foods, you can degrade the nerve endings, building up a “tolerance” for spice.
The weird thing? Those nerves can grow back if you take a vacation from your spice-laden diet. That’s still what scientists are digging into.
