Dogfish Head just got a new cryogenic freezer to play with

The microbrewery is planning to use the freezer to store yeast strains and “become self-sufficient.”

“Off-centered” has always been the the name of the game for the Milton-based Dogfish Head Brewery, known for its unconventional concoctions and rather interesting business expansions — the company opened its own seafood restaurant Chesapeake & Maine in downtown Rehoboth Beach last year.
Science and tech has also been a key part of the beer-making operations at the microbrewery and now, it looks like the team has a new toy to play with to do that.
A recent tweet from Dogfish Head shows off a new cryogenic freezer that microbiologist Aimee Garlit has been using to freeze yeast strains “for future incubation and propagation.”


Pretty cool (sorry) but what will this new tech do for Dogfish, you ask? An Instagram post from the company explains further:
“With the ability to keep the yeast cells dormant, we’re able to maintain a library of our yeast strains in-house, and ultimately become self-sufficient!#beergeekery”
#beergeekery indeed.
